Desperate Housewives CookBook Contest Entry #1
One of the best things a busy housewife can do is once-a-month cooking. Some people set aside an afternoon and prepare several meals to freeze for the month, but I prefer to cook extra servings of whatever I’m preparing for dinner each night. Here’s an excellent, healthy recipe to try!
Mustard Encrusted Salmon
This once-a-month cooking recipe can be doubled/tripled etc. and freezes well. The original recipe calls for baking and then freezing the salmon, but I freeze it uncooked.
For four servings:
2 T. balsamic vinegar
2 T. brown sugar
1-1/2 t. dry mustard
2 T. dijon mustard
1/3 c. vegetable oil
2/3 c. seasoned bread crumbs
four 7 oz. salmon fillets, skin removed if desired (or one 1.5 lb. salmon fillet)
Mix vinegar, sugar, dry mustard and dijon mustard in a small bowl. Stir in oil until well mixed. Pour sauce to cover each fillet completely. (If freezing, wrap tightly and reserve breadcrumbs separately). When ready to bake, thaw if necessary, make sure sauce covers each fillet and sprinkle breadcrumbs over the top. Bake until cooked through, approximately 18 minutes.
