Desperate Housewives CookBook Contest Entry #6

by Leora Israel Zellman on November 10th, 2006

"Chicken delight"

INGREDIENTS
4-5 chicken tenders (no more than 1 lb)
2 tomatoes, diced
2 tsp. Herbes de Provence
2 tsp. Mrs. Dash
2 tsp. Oregano (dry spice)
3-4 cloves of garlic
1/2 cup water

DIRECTIONS
1.  Put the chicken tenders, diced tomatoes, herbes de provence, Mrs.
Dash, and oregano in a medium-sized frying pan.
2.  Pour 1/2 cup water into pan.  (You can throw in 1 TBSP of olive
oil instead of the water if you like: by using water instead of olive
oil, the final product is less caloric and very tender.  If you decide
to use olive oil, it is still a good idea to add 2 TBSP water to keep
the tomatoes from burning and the chicken tender.).
3.  Simmer ingredients for 3-5 minutes.
4.  Flip the chicken.
5.  Continue to occasionally flip the chicken, until all the water has
evaporated.
6.  Add pressed garlic to the pan 5 minutes before chicken is done
(about 12 minutes in).  This way, the nutritional value of the garlic
will not be lost by overcooking it.
7.  Voila!  It’s done (15-17 minutes max.).  This recipe is low-fat
and makes excellent left-overs.
