Desperate Housewives CookBook Contest Entry #7
Highland Park Hash
(This recipe began as a kind of hamburger helper but now that I worry about cholesterol I use veggie burger)
Ingredients:
1/2 cup diced onions
1 lb lean ground round beef or veggie version
1 tsp canola oil
1 large can cooked diced tomatoes
1 cup long-grain brown rice
spices to taste
In a nonstick frying pan, saute diced onions in a teaspoon of canola oil.
Add 1 pound lean hamburger or veggie ground round equivalent, and saute until done (5 minutes for veggie, longer for beef)
Add 1 can of diced tomatoes and simmer for a little while.
Cook long-grain brown rice and add to mixture.
Add spices to taste (cumin, garlic, pepper, oregano etc)
Let simmer for another 10 minutes.
Serve with a tossed salad and voila, DINNER.
